Plymouth mountain in deer creek canyon was nice, I squeezed it in one morning before a flight, 6 miles with 1300' of gain. Personally I think Green Mountain in Golden is kind of boring, just open space and no trees or anything. It would be less likely to be muddy though given that it is in the sun all day, but I hiked around Morrison yesterday and the mud wasn't bad at all.

Mt Morrison right behind Red Rocks. 2-3 hours max round trip, nice vertical gain, great views, and less than 30 minutes to DTC. Also offers some easy class 3 near the summit.
