Back to the OP...

I went through a big sardine phase. A bit heavy and messy, but more protein per oz than steak. Just have to find the ones packed in EVO.

If you don't have a dehydrator, then you'll probably need to get one. That way you can make jerky without the excess sugar or chemicals. Plus some veggies are good too with the right spices (zuchinni and garam masala - my fav)

Correct me if I'm wrong, but the fat part should be easy. Aren't there some nice packable fats like coconut oil or peanut butter that you can take along? I mean, you're looking for some pretty specialized dehydrated meals if you want stuff that's all set and ready and just needs boiling water. How long are you going out in a stretch? 14ers thru hike? Or a long weekend in the Sawatch?

No offence, but is this whole thread a humble brag about your newfound success with this keto diet?

Oh and Polar, get some help man. You can beat this fat thing. You've just gotta get out there and move around a bit.

I'm not sure if it's technically "paleo," but I used to take a lot of summer sausage on multi-day trips. High-fat, high-protein, so as long as you don't get one that has sugar in it that should work fine.
Most things worth doing are difficult, dangerous, expensive, or all three.

When I say I eat high carb low fat, I don't mean a bunch of pop tarts and cherry coke either.
I prefer Diet Cherry Coke with my Pop Tarts.

Good on you for wanting to lose weight. To my knowledge, the only way to drop pounds is to reach a state in which your caloric expenditure exceeds your caloric intake. There are many ways to skin that cat--hope you find a safe regimen that works and leaves you feeling good!

If you also want to find a diet that also reduces your risk of cardiovascular disease, cancer, diabetes, metabolic syndrome, 14ers.com rage, etc., that's a separate discussion.

For single-overnight trips I like taking frozen meat. By the time it's time to eat it, it's usually just about thawed. A few hours past that it may be unsafe to eat, so it's gotta go straight from the freezer to the trail. I'm talking about chicken breasts or steak or hamburgers here.

The paleo diet is rather based on low-carb vegetables though. High weight-to-calories ratio. Lose those and most of what's left is meat.

Honestly, I'd just eat the mountain house meal, and supplement the extra fat you would like to eat in some way that's easy to pack in. Adding any sort of non-rancid fat to a freeze dried meal seems like it would just make it way better. Y'all don't add things like dried meat to those things already?

As an aside, the amount of bacon I eat is astounding. I used to be on a high-carb, little fat diet, and thought fat made you fat. I can attest that is does not. I'm happier now that I'm a less picky eater, but try to stay away from too much refined food, which I fail at daily.

Thank you! I am not trying to start a debate about who's diet is the right diet. I don't care if you love you carbs because I'm not here to "convert" anyone. Sheesh.

Summer sausage is a good call. Tons of calories and a good amount of fat. I'm not sure if it's paleo either. Maybe? I think Salami and Pepperoni also have some degree of shelf life ... a couple days maybe?
